Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make anda masala today. We are making this anda masala a little dhaba style. I have boiled 6 eggs and peeled these. Add 1 tsp red chili powder, 1/2 tsp garam masala and salt to taste. Mix well. When eggs get nice coating of spices, take a fork and prick the eggs a little. So that eggs won’t break while frying in oil. Eggs are well coated with spices. Roast 2 tbsp besan in a pan. If you remember, if you have seen my Malvan vlog, there we stopped in a restaurant. To have misal in a small hotel. To give thickness to sabzis the besan is roasted in oil in dhaba style gravies. Generally gravies those we have in dhabas on high ways, Mostly besan roasted in oil is added to it. So that gravy gets nice texture and thickness. I have roasted besan on medium heat for about 5-6 minutes. It has begun to turn light red. Take it out into a bowl. Besan is roasted. Eggs are coated with masala. Heat up 3 tbsp oil in a pan. Fry the eggs in it. As this recipe is dhaba style, a little more oil is expected. Eggs are nicely fried from all sides. Take these out into a dish. Eggs get nice flavor if we fry eggs in this way. No need to change the oil. In the same oil add 1 tsp cumin seeds, 2-3 bay leaves and 1 cup finely chopped onion. I am adding a little more onion as we want to make masala. Fry onion until it gets nice golden color. I have fried onion until it got nice, even golden color. Add puree of 3 tomatoes. I have blended tomatoes in mixer. You also can use store bought tomato puree. Add 1 tbsp red chili powder, 1 tbsp garam masala, 1 tbsp coriander powder and 1 tsp ginger garlic paste. Mix well and fry this puree until it releases oil. Masala is nicely fried. It has got fantastic texture and nice color. Add about 1-1 1/2 tsp roasted besan for texture or thickness. Mix well. Fry for about 2-3 minutes more after adding besan. Masala is fried well. I have fried it for about 2-3 minutes after adding besan. Add water to adjust the consistency. Always use hot water in hot gravy. Due to this it gets nice tarri and sabzi gets good color. Add salt to taste. Mix well. It already has got nice tarri, good color. Cook for about 3-4 minutes after adding water and then add eggs. I have cooked the masala for about 3-4 minutes. Fantastic flavor and awesome texture. Masala is looking fantastic. Add eggs. You also cut the egg in between and add in masala. Cover and cook on medium heat for about 4-5 minutes until flavors are absorbed in eggs. I have cooked anda masala on medium heat for 4-5 minutes. You can see the texture.. Fantastic. Nice color. Garnish with coriander. Anda masala goes fantastic with jawar bhakri. It goes well with jawar, bajra or rice bhakari. It goes well with plain paratha too. I have already shown you the recipe of plain paratha. You can have anda masala with hot paratha. You also can make naan. I have shown naan recipe too.
