Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make dal fry today. For making dal fry, I have taken 1 cup tur dal in a bowl. Wash with water 2-3 times really good. Transfer the washed dal into pressure cooker. Add water enough to cook the dal. Mostly I use 2 cups water for 1 cup dal. As tur dal gets cooked it thickens up. Add 1/4 tsp turmeric powder and a pinch of asafetida. We have to make regular varan.Mix well. Close the lid and cook on medium heat until 4 whistles. Dal should be nice and soft. Until dal gets cooked, let’s make masala for making dal fry. For that I have heated almost 3 tsp butter in a pan. You can use ghee or oil instead of butter. When butter heats up a little let’s make tadka. When butter heats up a little, add 1 tsp mustard seeds and let it pop up. Or it will remain raw. When cumin seeds pop up, add 1/2 tsp cumin seeds and let it splutter. When mustard seeds splutter, Add 1 cup finely chopped onion. Mix well and fry until onion gets light golden colour. When onion gets nice golden colour, add 2 medium size finely chopped tomaotes. Mix well. Tomato is a little sour. If you don’t like sour taste, you can add a little sugar. Add 2 green chilies, 1 1/2 tsp coriander powder, 1 tsp red chili powder, 1 tsp garam masala. Here I am using kitchen king masala. Kitchen king masala tastes awesome in any north Indian recipe. Add curry leaves. These should ahve been added before this. You add these in tadka. Add 2 tsp garlic paste. Take 10-12 garlic cloves and blend course in mixer. Mix everything well. Cover and cook until tomato becomes soft. You can add a water little if you want. Until masala gets ready, I have cooked dal really good until 4 whistles. Beat the dal well with beater. It should be homogenous. I have cooked tomato covered on medium heat. Awesome flavour and also looking yummy. Add cooked dal in masala. Add a little water. Mix well once. Add salt to taste and 1 tsp kasuri methi. Kasuri methi is not added to dal fry. But I like it. Flavour of kasuri methi is just awesome in dal fry. You don’t add it if you don’t like. Boil for about 5-7 minutes. I have cooked the dal for about 10 minutes. Looking yummy.. This is basic dal fry. Resturants serve dal fry tadka too. For that I have heated 1 tsp ghee in tadka pan. Punjabi people eat nothing without ghee and butter. You can use oil too. Add 3-4 diced garlic. Let garlic turn a little golden. When garlic turns nice even golden, add 3-4 dried red chilies. Fry it nicely. Add this tadka in this dal fry. Wow.. Dal fry tadka is already with dal fry too. Dal fry tadka goes well with jeera rice.
