Christmas just wouldn’t be Christmas in Britain
without a roast turkey and Christmas pudding The Roast Restaurant is located at London’s
Borough Market. This gourmet venue gets into the festive mood
in late November, and turkey is featured on the menu. “Hi, I’m Matt Bishop I’m the chef at Roast
restaurant, London Borough Market. Today we’re going to do a typical Christmas
turkey and the typical Christmas pudding.” Matt Bishop concentrates on the turkey breast. “The biggest problems people have with turkeys
is, they are very big animals and the difference between cooking the breast and the leg – the
breast tends to go dry before the leg is cooked. So we remove the leg, we mince them, we put
them inside here and then we roll it and we roast it.” Bacon plays an important rle when preparing
roast turkey. “The bacon we’re going to wrap the turkey
in, the bacon gives that little bit of moisture, that bit of fat a turkey needs. Because the turkey breast hasn’t got a lot
of fat in. We don’t want it to dry out, we want to keep
it nice and moist.” The roast is tightly wrapped and put to one
side for a while before going into the oven for two hours. It’s a lot of work for a Christmas morning. “I would suggest that we do this a day before. Do it a day before Christmas, cook it, chill
it and then on Christmas day, it’s just a matter of pre-heating it, so you can do it
in an hour.” Ideally, a couple of dedicated helpers could
pitch in the day before to peel the potatoes, scrape the parsnips and prepare the brussels
sprouts. Along with all the vegetables comes a little
something else that’s an essential part of a British Christmas dinner. “In my house we have the pigs in blankets
we cook two kilos oft he pigs in blankets and we eat them throughout the day and the
night, they are really good cold.” The Christmas menu that is served up at company
parties and evenings with friends in December is made up of more than one course. For dessert, Christmas pudding is a must. A pastry chef prepared this one. These are the ingredients. “Flour, suet, sugar, eggs and then you put
in whatever fruits you want, and then alcohol, traditionally just Brandy, we put some stout
and Pedro Jimenez, which is sherry.” Many families make the Christmas pudding weeks
in advance to allow it plenty of time to mature. “If you give it a stir it is supposed to give
you good luck and fortune. Each person in the family gives a stir with
the spoon clockwise.” The Christmas pudding is steamed and then
flambéed with brandy. But, it’s not yet time for dessert. The various side dishes for the main dish
have to be ready at the same time as the turkey. “To make sure it’s ready the best way is to
use a thermometer, and in the middle it should reach 72 degrees Celsius.” Now, the trick is to gather all the guests
around the table. “Bon appetit, enjoy your turkey, happy Christmas
from everyone here at Roast.” A traditional British Christmas dinner in
Britain. Something that’s not to be missed.
